Consistency

The biggest lever we have with nutrition is consistency. It is difficult to eat meals that are balanced consistently over a long period of time. My service helps people make consistently good choices with nutrition. We are all bombarded with dogma around food. Which diets are “correct” or the “best”, and which ingredients you should always and never eat. I encourage you to let go of the dogma around nutrition and to focus on making time for food that is good in quality and balanced in energy. Eating this way will give the biggest return for feeling better.

Why I cook this way

Everyone in the world deserves to have a caring person prepare meals for them with their well being in mind. I love eating in restaurants and take inspiration from the different flavors and combinations you can find. I’m grateful for everything that I learned in the 20 years I spent working in them. But restaurants cook to excite your dopamine system with high fat, high sugar food that pays no mind to disease prevention or your performance. Restaurants exist as a place for celebration, pleasure and excess. I cook out of a desire to heal and take care of people by balancing the elements of energy and pleasure.

Energy Balance

Energy balance means eating the right amount of food in the right ratios. My service provides meals with a 30/40/30 calorie ratio. That means the calories in a meal come from 30% protein, 40% carbohydrate, 30% fat. Eating in this way will promote a reduction in adipose tissue and help your body function optimally. It will greatly reduce cravings for snack foods and processed foods by providing you with valuable nutrition that leaves you feeling full and satiated. My meals are naturally high in fiber by including high quality simply cooked vegetables, roots, fruits, whole grains, beans, peas, and legumes. I design the meals in order to get the most real whole foods as possible. You will find that eating this way has positive benefits mentally, physically, and emotionally. Energy will be better sustained for longer periods of time. The work you do in training and your intention to prevent disease long term are supported by eating in this way. Feeling better, looking better in turn produces confidence that supports how you feel about yourself.

Cooking and Food Handling

My service is meant for people who consider food as an important aspect of their life, not an afterthought. As a chef I am educated, detailed, meticulous, and obsessed. I love the kitchen and food as it is a part of myself. As an athlete and human balancing my health with family and work, I’m interested in feeling good and setting myself up for a better life. I recognize the role food plays in all of this and no longer want to turn a blind eye to the effects of food on how I feel in the day to day. My background spans many years in all levels of cuisine from the best Michelin star Italian, Californian, French and Japanese restaurants, to east coast pizza and burger joints. I strive for perfection and improvement every day whether I’m making a steak for the president or sweet potato fries for your toddler.
